Parmigiano reggiano

Known as the King of Cheese.
Aged for 12 – 36 months.
It has a distinctive strong nutty flavour.
Used in pasta & risotto dishes, shaved in salads.
The rind can be used to add to cooking for added flavour.
Grana pandano pdo

Aged for 9 – 12 months.
It has a sweet, mild, nutty flavour which intensifies by ageing.
It is a subtler, less nutty and less salty than Parmigiano.
Given the name “Grana” due to its characteristic grainy texture and “Padano”, the area of Northern Italy where the milk comes from.
Used in pasta dishes, egg dishes, shaved in salads and with various meats.

Gorgonzola
Dolce and Piccante 1/8th wheel

Product unique to northern Italy in the city of Gorgonzola near Milan.
One of the worlds oldest blue veined cheeses, made from full cream cows milk.
Dolce – takes a minimum of 50 days aging.
Flavour is sweet with mild notes of sour cream, easily spreadable.
Piccante – takes a minimum of 80 days aging.
Compact and crumbly
Flavour is strong, intense and sharp with a pungent, spicy bite
Both can be used in pasta dishes, sauces, salad dressings or added to risotto or polenta.
Drizzle with honey and pair with fruits such as pears, apple and grapes.

It has a firm and compact consistency with a buttery texture
